Each dish has a unique and carefully studied involvement of flavors, any variation compromises the balance of the dish and the final experience, for this reason we invite our guests to try and taste our Menus as they were created by Chef Andrea, we are sure that you will not regret it.
For some decades, Pinot Grigio has become the most widespread grape variety in Trentino, although not always with sufficient attention to the quality and vocation of the territory. Despite this “industrial” drift, Pinot Grigio is a variety of great value, not surprisingly considered a “noble grape variety” in the famous Alsace. From its grapes, if produced on the most suitable soils, white wines are obtained that know how to balance roundness and freshness, good body and elegance. It has found its home in the sandy soils of the Sarca plain: low yields and careful vinification guarantee a wine of absolute quality.
“La Nosiola”, in Valle dei Laghi; “il Nosiola”, in the rest of Trentino: beyond the article, this variety is certainly the one to which the winemakers of Trentino are most fond. Surely because it is the only native white grape variety still cultivated, but also because – with its austere nature and not easy to tame, but capable of opening up and revealing itself over time – it symbolically contains a side of the character of the inhabitants of this rural land. In the mild and breezy climate of Valle dei Laghi, Nosiola has found one of its ideal cultivation contexts, so much so that it has become a symbol of the material culture and collective imagination of this land.of the collective imagination of this land.
The Pisoni family has been producing this wine for generations, made with grapes from vineyards located at 450 meters above sea level, on the hill of San Siro, near the small Romanesque church that bears the same name. It is such a refined and special wine that on July 23, 1930, the Bishopric of Trento recognized it as a “Mass Wine” and therefore as a “Genuine Vine Wine produced for the Celebration of the Divine Sacrifice”. The Chardonnay expresses itself as balanced and precious, with hints of ripe fruit and a soft and fresh sip.
After years of winemaking research, the Pisoni family has succeeded in creating a winemaking method that does not require the use of added sulphites, but guarantees wines of the highest quality. Codecce takes its name from the vineyard of the same name, nestled on the San Siro hill, perfect for growing white grapes that reach the perfect degree of ripeness and aromatic concentration. It is a wine with full, mature and exotic aromas, and a soft but fresh and crisp taste: a perfect representation of the Valle dei Laghi, an Alpine territory with a Mediterranean climate.
WINE PRODUCED WITHOUT ADDING SULPHITES
Typical aroma of rose, tropical fruits and nutmeg. Pleasant acidity, good body and aromatic finish.

Whether or not it derives from Tiroler Gold, "gold of Tyrol", Teroldego is certainly one of the few local vines that can be labeled as autochthonous without too many doubts. This variety, very closely related to Lagrein, can boast Pinot as a distant but illustrious ancestor. Cultivated successfully throughout Trentino, its grapes produce a wine with a brilliant ruby color, rich in polyphenols, fresh and full-bodied, with aromas that recall wild berries.
On the hills overlooking the estate there is a small Romanesque church dedicated to San Siro, the saint who as a boy – according to an ancient hagiographic source – brought the baskets of loaves and fish that Jesus then multiplied. The Pisoni family has been producing this wine for over a century, with varieties of French origin that in the mild climate of the Valle dei Laghi and in the clay-rich soils of the Le Part vineyards have found the perfect context to produce grapes that reach the right ripeness every year.
Ruby red in color with violet reflections, and a characteristic scent of violet. With a persistent, savoury and balanced taste.
Teroldego was chosen as the red wine of the “sulphite-free” line: not only because it is the main wine of the Trentino tradition, but also for its varietal characteristics, being rich in anthocyanins, natural antioxidants. Thanks to its soft tannins, it lends itself very well to vinification and maturation only in steel, which enhances its aromas of berries, strawberry and black cherry, and makes it fresh and immediate to drink.
WINE PRODUCED WITHOUT ADDING SULPHITES
Son of the genius loci of this land, Rebo is a cross between Merlot and Teroldego, selected in the early 1950s by Rebo Rigotti, a researcher at the Istituto Agrario di San Michele all'Adige, born and raised in Valle dei Laghi. A true "cultural native", which by an inevitable fate found its ideal habitat in the land that gave birth to its creator, from whom it takes its name. Rebo is a wine with great structure, rich in color and sweet tannins, which combines the gentleness of Teroldego with the robustness of Merlot: due to its characteristics, it does not fear long refinements in the bottle.
Characteristics : Fruity with hints of black cherry and plum, floral, spicy and mineral with typical cocoa notes.
Winemaking : traditional fermentation
alcoholic in steel tanks, aged in oak barrels and subsequently in the bottle.
Aged on yeasts: 48 months

Hints: a wine of great expression with pleasant hints of yeast and sweet almond and a nuanced aromatic background typical of Chardonnay.

Aroma: Refined, intense and fruity with aromas of ripe yellow peach, candied orange and brioche bread that blend well with light notes of wood and light hints of yeast.
Dekatos it is a Classic Method with a long stay on the yeasts for over one hundred months to characterize and chisel a unique style.
